Are we sure? It might be they start the wedding and do the reception next episode. It doesn't seem they have enough time to really tell the Sir Dontoss bit.
I'm pretty sure they are doing it tonight because (show spoilers?lol, not sure if I should spoilertag this)
I read an article mentioning that the episode ends with a shocking moment that will leave everyone talking or something along that line.

it seems there's gonna be the first Jaime-Bronn interaction in episode 2, can't wait to see how they mesh

If you watch the preview, you can see
Bronn fighting/training with Jaime. I think Bronn is going to replace sir illyn when Jaime leaves. At least it will keep Bronn in the show

Synopsis for Episode 3 makes it pretty clear that Joff dies tonight:

In the frenzied aftermath of the royal wedding, Tyrion gets a visit from a loyal subject, but wonders if anyone in his family will help him out of his current predicament. Meanwhile, Tywin offers to work for the common good with a presumed enemy; Sam takes stock of the personnel at Castle Black; the Hound gives another life lesson to Arya; and Daenerys makes a decision outside the walls of Meereen.

What so soon?

I feel like theres not enough buildup to this.
They've been building up Joffrey being a dickhead for over 3 seasons now. It's time to end him.

Besides, it being unexpected is the whole point. Viewers are complacent towards the start of the season, so unending the table and changing the game like this is a very clever move.

He said this would be his last acting job. I hope he changes his mind.

Why on earth? I'm sure he can find work that isn't as high stress/exposure/workload as GoT.

Another factor was his recent work with the aid agency Goal, which helps homeless citizens in Haiti recover from the devastating earthquakes in 2010. "I'd been looking to use the celebrity I've got from the show to bring awareness for causes Goal supports," he said. "I had the connection with the organization through my uncle, Tim Gleeson, and he worked with Goal in the 1980s. It was inspiring to see the improvements being made in Haiti, to see the motivation of the people to improve the quality of life. People are eager to get on with their lives and be resilient."

Damn, talk about distancing yourself from your character. What a genuine guy.

Fuzzy

I would bang a hot farmer!
I remember an interview where he said he wanted to be an academic (professor, lecturer, etc) because that's where his passion was.

I really hope they're going to draw Joffrey's death out immensely. Like, make him go purple as a grape, foam from the mouth, claw at his throat - make him look like he's in huge pain and agony, so that people actually feel bad for him, and for wanting him dead.

I'm pretty sure he is going to go full blown douchebag during the ceremony leading up to his death so I doubt people will care either way.

Should be a fun episode tonight.

A couple quick notes:
- Please don't post gifs from the previews and promos or anything that hasn't aired yet.
- Any casket dancing and other shenanigans in the other thread tonight (or in general) will probably be met with a ban. This includes things like posting grinch.gif, "The book thread sends their regards", and any other nonsense like that. Just stay out of the other thread. Thanks.

Oh also I'm very excited for Ashton-Griffiths' performance as Mace Tyrell. In the little preview trailers he seemed really good.

We shall see!
