Cause you want to fool them into hiring you. The best practice during interview is to sit straight, don't even touch your cellphone or other devices at the waiting area. If you are bore just read your note or résumé.
It is very hard to tell whether a person is a good hire, the only reference they get is how you act during the interview. If you pull out your phone or ds, they will assume you will do the same during work.
