Ok, someone explain why the refs didn't put 15 seconds back on the clock when an defensive offsides occurred? Saints really got screwed on that.

It doesn't stop the clock because it's still a live play. If the Saints had gained yards, they would have kept them. It's a risk/reward for the offensive team.
