I still need to find why Saber is so popular.But I do not have patience to watch a thousand Fate animes.
Here's a kind of guide that may or may not help you:
In the source material(the PC visual novel), there's 3 routes. These are largely self-contained as stories, but are played in order as each one uses information from the previous one. There's also a small epilogue.
The first route(Fate/stay night), some of the second route(Fate/Unlimited Blade Works), and the epilogue focus on Saber the character
There's also a prequel(Fate/Zero) which explores Saber the character, and a sort-of-sequel(Fate/hollow ataraxia).
Anyway, adaptations:
There's the DEEN adaptation of the first route that splices some of the other two routes' plot elements in. Not too many people are fans of this(at least from what I can see on GAF), but it was the first anime the series got.
(Fate/stay night) (TV)
There was a TV adaptation of the prequel, which as far as I can tell almost everyone agrees was worth watching, even people who aren't really fans of the series proper.
(Fate/Zero) (TV)
Then there was a movie adaptation of the second route, which brushed over a lot of the plot elements and focused on the action because... well, it was a movie.
(Fate/Unlimited Blade Works) (Movie)
And currently we're in the middle of a TV adaptation of the second route, which is done by the same people who adapted the prequel, and is spending a lot of time and effort to get all the major elements down. It's split-cour; the first season of it wrapped up a couple months ago, and the second and final season of it will start airing in around a month.

There's also a comedy OVA series called Carnival Phantasm, which is pretty funny if you're already waist deep in this setting's Kool-Aid.
Most people would point at watching Fate/Zero and probably the series that's recently going on. YMMV
