Yeah, you can only change when your party is following you around, so everywhere but cities I think.
Vaan is probably more of a KNI than a SHI since most of his art (XII, RK, Dissidia) shows him using 1H swords, and not daggers. He probably has the most plate actually equiped of any character, too hhhh though that's not saying much giving the general nakedness of the party's clothing.
But if you have a 1 Job rule, then KNI could be argued for Vaan, Basch, or Ashe pretty equally. Ashe could meet her 'sword and shield' preference via TBM + any shield Job. Basch could be KNI or BSH. So you could go with Vaan for KNI for either works.
If you did go SHI for Vaan though, I'd probably try to give him Shemhazai though because the most defining parts of his concept art (especially in RK and Dissidia) are 1H swords and guns (specifically Fomalhaut). So if you do go with SHI over KNI, I'd try sacrifice it from ARC for MCN. It's tricky though because you're basically choosing between lore (giving Vaan access to guns) or gameplay (Fran ARC really needs that extra STR). ARC/RDM would give her access Dragon Mail though, which is regrettable endgame armor but you could have her wear Dragon Helmet +Lordly Robes, and DH is only -2 STR from Magepower Shishak and the -6 DEF may not matter much if she's pretty far back anyhow.
That said, bow damage may not matter much for a ARC/RDM Fran because you'll probably be equipped with a mid-game bow anyhow (Flame Bow) for its P-UP Fire bonus, so she'll probably be wearing Circlet/Lordly Robes and spamming Ardor (+Flame Bow, +Oil) and shooting fire arrows in between.
Penelo as a Monk is interesting because on one hand, it's said she was taught martial arts. But monks in Zodiac Age lore, I think, are basically warrior-pilgrims of the church, notably from Mt. Bur Omisace. That could easily fit Ashe's 2nd Job or even Basch maybe (if he spent time training with monks at Nabudis or whatever).
Balthier with MCN/WHM, it's a great combo, but I never get the lore behind WHM when in XII he's a Sky Pirate and pre-XII he's a
Judge. I would think a Heavy Armor Job,
especially melee-based, would fit him more.
. I'd think WHM would fit numerous characters (who start with Cure or have more a 'Knight/Paladin' background more tied to the churches of the game, whereas Balthier's story could be argued to not be tied to that) more, but it's not a bad place to put it and it is a great gameplay combo.
KNI/FOE is a waste on Ashe. So much overlap and with a 1 Job rule you're wasting critical Adrenaline, Focus, Genji Glove, Heavy Armor, Shield Block 3, and more. I'd much sooner go KNI/TBM or FOE/TBM. Especially when a BSH gets stuck with RDM and could critically use those extra Battle Lores, Adrenaline, Focus, Heavy Armor, Zodiac Escutcheon or Aegis Shield, and Shield Block 3. RDM fits Fran, Ashe, even Penelo or Vaan better probably, and BSH would fit much better with MNK, FOE, or KNI (both in terms of gameplay and Basch's story).
All that said, I mentioned before I think permanent Jobs in Zodiac Age are not really a lore constraint and just a 'for this quest' sort of rule, and that I don't really think any Job breaks lore. They're just Licenses. Balthier could just as easily use Gunner Licenses pre-XII but switch to White Mage Licenses for XII, and I see no reason why that wouldn't fit the lore no more than if he switch from a gun to a sword because that's what the party needed =p At best, I think concept art just shows that weapons they prefer to use but not necessarily what they're trained in because 'training in something' isn't really how the lore of Licenses fit. So, I think Licenses kinda make any Job lore friendly lol the rest is headcanon.
Feedback regarding the esper and job distribution would be very welcome.
Or, regardless of aboce post, if someone -could suggest me an optimal build with the following constraints,
it'd be greatly appreciated as well:
*Vaan as Shikari
*Penelo as Monk
*Balthier as Machinist
*Fran as Archer
*Basch as Bushi
*All 12 jobs used
*3x Swiftness for each character
*Somewhat lore-friendly (although I don't really care THAT much about this one)

Sarcasm aside, you aren't entirely wrong. Still, those discussions wouldn't occur if the job choices weren't final, thus why many people are scrutinizing the best job choices available. It is a major aspect of this HD remaster, you can't expect people to overlook it and not discuss it. Now, there aren't many doubts regarding the best job combinations, and those are now mentioned in the OT through gamefaq links, so maybe the frequency of job related questions will drop (the game just got released, this situation is normal; most questions has been answered by now, things will calm down).
Now, I'm expecting more questions regarding chests, "missables", missed abilities which can only be acquired in chests which you may not have opened because in the original chests were kinda useless and didn't have anything worth getting most of the time, the "Great Serpentskin" vicious tale (ie. the item which you shouldn't sell but no one tells you that and you can't possibly guess you'll need it for a better reward during a quest), the "Where can I find the Genji Gloves?... WHAT DO YOU MEAN I MISSED MY CHANCE TO STEAL IT?!" realization, Bazar shenanigans (ie. the unlock requirements for that thing can be infuriating because of how the whole thing actually work), etc.
I can't unlock Penelo's second job. She's Uhlan as first job. I unlocked the second job of everyone else, but there's just no way to purchase hers. There's no price and when I press X I doesn't do anything.

Gilgamesh fight, only when he is in his third phase. The first two phases don't have anything to steal, and most players don't try to steal after noticing the boss doesn't have anything on him.
You can't expect players to have the sudden realization that, unexpectedly, the boss decided to add something in his stealable inventory mid-fight.
Aside from that, you can get one Genji Gloves by doing the Hunt Club quest (may need to do that quest a certain way? Need more data). EDIT: Oh boy. That one is going to make some people mad, especially with some of these rewards on the line: Hunt Club.
Also, it seems it can be stolen from a Trial Boss, if what I read is correct.

I don't think it's that big a deal though, if I'm being honest. Doesn't having the serpentskin just mean that you can get a Golden Amulet from a side quest? It's hardly a needed accessory, especially now that Trials LP grinding is a thing, and the game has a bunch of them anyway.

All characters begin with some innate abilities already learned, no matter their jobs:
Vaan: Steal
Balthier: Steal, First Aid
Fran: Steal, Black Magick 1 (Fire and Thunder), White Magick 1 (Cure, Blindna)
Basch: Libra
Ashe: White Magick 1
Penelo: White Magick 1
Add to that they also have some equipment licenses right off the bat (mostly level 1 ones).

If you've been doing some chest looting with the Diamond Armlet equipped, you might have gotten some Meteorites. There are 2 consumables named Meteorite, but each have different descriptions and uses. Meteorite (B) can inflict Disease, which prevents healing. The optional King Bomb fight is one of the few fights where Meteorite (B) is helpful.
There is a chest at the orange save crystal zone right before that fight that has Meteorite (B). It's the chest at the northeastern intersection. The chest doesn't spawn all the time so you might have to do a few zones to get it to pop.
As an aside, I wouldn't recommend looting the majority of the game's chests with the Diamond Armlet equipped. There are a few exceptions to this including an entire zone, Cerobi Steppe, where you NEED to have the Diamond Armlet equipped for a chance of not getting literal trash. The Diamond Armlet needs to be equipped on the character that's doing the looting.
I'd forgotten how generous this game is with barrels/baskets scattered around everywhere, that also reappear next time you enter the area. Not that I'm complaining.

Don't remember much of this game since I played and beat everything it had to offer so long ago at original release. But it's coming back quick and I'm loving it. The soundtrack is godlike.
Picked up Larsa yesterday and have been doing nothing but grinding and side-quests. All I should have to do is kill Cúchulainn and I can move on with the story.
I ordered the steelbook edition of this game on June 21st. Tuesday morning (release day), I got an email that said that it wouldn't be in stock at the store I had designated for pickup, but that it would be in on Friday (today).
This morning, I got the same damn email, but this time with no ETA. Thankfully, Amazon seems to have it back in stock, so I ordered one from there. By the time I get the game, it will have been out for over a week already (Amazon says it will be delivered next Wednesday).

Have you actually unlocked the nodes to make a path to it? It appears on the board when you cross a certain point in the story but like any other node you still need to make a path to it. Other than that no idea what it could be.
