Holy smokes, I never knew about this. I’m getting a smoker in 3 weeks so I will be in this 100%. Going to do a brisket the first weekend.

In case you didn't know, always a good idea to burn off any oils/chemicals from the inside of your smoker before the first time you actually smoke any food and get it good and seasoned so that brisket doesn't taste weird.
