FTL Advanced Edition. It make the game better but do not make the original bad by comparison.

Starcraft Brood War. Not really a DLC for some, but so good that I put it anyway.

'End of Zoe' is one of the best DLCs ever, playing as Joe Baker punching molded and 'gators to death with robot arms. Enough said.
'Daughters' is another short story DLC showing the first hours of how the
infection spread to the Baker family.
Some very creepy moments.
'Bedroom' was an extra room puzzle which played a bit like the birthday room puzzle in the main game, but on steroids.
'Nightmare' was a really neat survival mode set in the Baker mansion's basement where you can set traps and upgrade weapons.
'Jack's 55th Birthday' was a fun little fetch mini-game that reminded me of the fun bonus modes in the earlier RE games.
'21' was a twisted take on the card game of the same name which was reminiscent of something like Saw:
Finally there was the most under-rated 'Ethan Must Die' mode, which is effectively a rogue-like mode where the challenge is just trying to reach the end of the run in the face of very limited supplies, devious booby traps and some tough monster encounters. Tons of replay value in that.
Resident Evil 2 Remake also had fantastic DLC like the Tofu survivor mode, but I think RE7 edges it. RE2R's Hunk 4th Survivor run with no damage though might be one of my favorite things I ever did in a game (not my footage):
Haven't played it myself (Still hoping for a physical release just like with Torna) but I heard from a good friend of mine that Future Redeemed is top tier DLC.

RE7 DLC really add to the base game, the issue is that it feels like it was cut from the game to be sold very shortly after release separately, Ethan's story is not very long so adding some of these short unlockables would have been way cooler with the exception of Joe and Chris campaings,thats my only issue
(With the option of paying $$$to unlock them instantly of course, like Capcom already does)
Yeah, so I heard, my friend couldn't shut up about it for days lol. He has now bought a used wii u and a copy of Xenoblade Chronicles X and going through that one as well. XD
Currently, I'm completing HFW's DLC and it is very good. It is even making me want to replay the entire game on ultra hard difficulty and I don't usually feel like replaying huge open world games.
Mandatory mention for Bloodborne and TLOU DLCs, because they were great.
But for "the best" DLC I have to agree with The Witcher 3. Specially Blood and Wine. It was something else.
