I also don't go to really fancy sushi places so it's pretty limited.
But yeah, I notice the same when I go to Colombia. They have a lot of different rolls. I'm actually surprised by how big sushi has gotten there in the past few years. Before you couldn't really find any food from east Asia in my hometown, and now it's everywhere.
Those are at all the cheap places around here.
Went to a sushi place the other day that had a bento box with:
Chicken Teriyaki, Assorted Tempura, California Rolls, Salad and Miso Soup.
It was $6.95, that's cheap in these parts.
Both me and the GF were full after.
Around here, the Big Mac meal is just over $8. :|

I think sushi is probably the most popular food here.
In some area's there's multiple sushi places on the same block.
The competition keeps the prices low, so it's one of the cheaper places to eat.
Haven't seen a study, but it feels like they outnumber pizza places here.
