Well like mentioned before, the none 'K' variant is 3.4 GHz clock speed, out of the box, while the K is 4.0 KHz. These numbers seem to be the only difference between the two. And excuse my ignorance in this subject but...(honest question) why is it possible to boost the 3.4 GHz CPU to 4.0 GHz like you state in your post, but not possible to boost the 'K' 4.0 GHz to something higher?

How do you use steam's built in fps counter?
Just got mine delivered! Now to install the M.2 SSD...
The K's biggest benefit is that you can overclock it over 4.0, but you'd be pushing it with the PSU they're offering, especially since it's only 500W and already powering a 980 Ti. The motherboard might also make it difficult.
The non-K's turbo boost automatically sets it to 4.0 GHz max when needed, so you'd pretty much be gaming at 4.0 at all times. If you're really serious about OCing, then it's worth getting the K, but the aforementioned caveats are worth considering.
Turbo boost is limited when more than a single core is under load. The K model has a base 4.0 Ghz clock regardless of the load on multiple cores.

Same business for me. I decided to just go ahead and switch it to pickup at a nearby fedex location. It's only a few minutes away and hopefully it means I'll be able to get it quicker than I would if I had it delivered to my apartment as they usually don't deliver until late at night.

Got mine today. It's a lot bigger than I thought it would be, so unless you have some freak Andre The Giant hands, you can easily swap out parts. I removed the bloatware, and installed CPUz to make sure the rest of the parts are what I ordered. Everything checked out.

It's also worth noting that the 6700k can also Turbo Boost up to 4.2GHz, and given its higher TDP and headroom it will usually be able to do so more frequently. Why are you reinstalling Windows 10 on the SSD? Is it because they put bloat on their version or something else?
Yeah that's what I thoughtJust get 16 and buy the rest off Amazon. The price HP charges is pretty ridiculous compared to what you will pay if you just order the RAM yourself online.
What's the best way to uninstall bloatware? Do you uninstall the stuff one by one or do like a whole OS reset?
Tinkered with mine for a few hours today. Ran some benchmarks. All came back where and how I expected. Ran pretty quiet too IMO. Yeah, benchmarks kicked the fan in, but I was expecting that.
I also added a 250GB SSD and cloned the 2TB drive I got with the rig and then wiped the 2TB. Made the SSD my boot and "games I'm playing now" disk. 2TB holds video files etc from editing and what not.
I went with a Samsung SSD. It came with software to clone the 2TB. Transferred windows, etc over. Hardest part (none was that hard) was plugging the SATA cable into the board. It's a tight fit, but I'd say I have average sized hands for an adult and I was able to do it easily enough. Likely basic stuff, but other stuff I used for the drives was a USB to SATA cable to clone the SSD, a disk tray to get the SSD to fit in the drive bay in the PC, and a SATA cable.
I don't have any games that push the system yet, but nothing like going back into your Steam backlog and crushing the graphics of 5-8 year old games
I purchased an SSD separately. There's no easy way to move the windows install from the system drive to the SSD so I've got to reinstall.

I don't have a huge frame of reference here - my last full desktop computer was a gigantic 10 ton alienware circa pre dell buyout - but it seems smaller and more lightweight than I was expecting. Tons of usb ports, and I like where they're located. Total setup time was literally 7 minutes. I was in win 10 within moments. I was bracing for a deluge of bloatware, but I got everything I wanted gone fairly quickly. Quick check to make sure all the parts were present, all good. I threw on steam, downloaded Dark Souls 3, and checked it out.
I don't think I can play Souls games that aren't on pc ever again. Dark Souls 3 in rock solid 60 fps at max settings, it's just really something to behold. It felt like a different game. Unless something awful suddenly happens, I couldn't be happier with this purchase.
I honestly never thought I'd buy a printer cartridge from hp again much less a prebuilt computer, but so far so good. Would recommend.
