I think the problem with the NMS demo is that it's missing the involvement factor. It showed some stuff you can do but to properly appreciate you need to get actively invested on the exploration part and earn your discoveries yourself.
Kinda like ICO. From a quick look at a vertical slice you'd be looking at an escort mission with some really light platforming/puzzle solving. You'd miss the attachment to the characters that's meant to develop as the game progresses and that, by the end of the journey, has you jumping back of your own volition.
